juice, which comes in cans, is valuable in an emergency. Following the rules given above, chicken juice may be used in place of beef stock to make barley, sago, spaghetti, rice, vermicelli, pea, noodle, celery, tapioca, and tomato soups. Thick chicken soup is made by adding the yolk of one egg, well beaten, to each quart of soup, and stirring constantly. Minced chicken giblets are an addition to any chicken soup.


CLAM SOUP

The clam juice, which comes in cans, is also valuable. Follow the rules given above. The clam juice may be used with barley, rice, vermicelli, sago, spaghetti, macaroni, noodles, and tomato. These soups may be thickened if desired.


TAPIOCA SOUP

Soak half a cupful of tapioca over night, boil until tender in the water in which it was soaked, and add to two quarts of beef stock or chicken stock.
